– Fist of Fusion. Providing a combination of Filipino and Hawaiian food, Fist of Fusion has earned plaudits for menu items like its marinated short ribs and Kalua Pork Sisig. The truck formerly went by the name Truck Norris.
– Jogasaki Sushi Burrito. Jogasaki’s chef has taken a successful stab at combining burritos and sushi. A typical Jogasaki creation involves sticky rice stuffed with sushi fixings like spicy tuna and barbecue eel, engulfed in a tortilla or a soy paper wrap.
– LudoTruck. Ludo brings a high-class reputation to the food truck business. Its chef trained for more than a decade at restaurants that earned the coveted Michelin three-star rating, and he has appeared on several cooking shows. His fried chicken, in particular, has earned extensive praise from critics.
